One of the biggest obstacles to switching to real, whole foods vs processed food, is the time it takes to prep and cook everything. I often hear people say they’d love to get rid of all processed food but they simply don’t have the time. There’s no denying we’re all super busy and to throw cooking in the mix, can seem like an impossible task. But that’s why I’m here to help:) I don’t have a lot of time either but I’ve found some easy ways to make a real food lifestyle fast and easy. For one thing, I batch cook everything! This is a huge time-saver because, like you, I definitely don’t have time to cook every meal. With batch cooking, I cook something once and make enough for at least 3 or 4 meals.
This is one of my favorite go to breakfasts because it only takes 10 minutes start to finish. And has just 2 simple ingredients that most of us have on hand, it’s gluten free and Paleo-friendly! It really doesn’t get any easier than this “recipe”.
2 Ingredient Paleo Pancake
1 green-tipped banana
2 pasture-raised eggs
Place ingredients in a blender like this one and blend until smooth. Or you can just mash the banana in a bowl and then whisk in the eggs in until you have a smooth consistency.
Heat a small frying pan over medium heat and place enough coconut oil or butter in the pan so the mixture doesn’t stick. Cook just like a regular pancake.
