This is one of my go to meals because its quick to make, inexpensive and perfect for any meal of the day. I pack my lunch 4 days a week and this is so easy to make ahead and store in a glass Tupperware so its ready to grab in the morning on my way out the door.
You can easily modify this recipe, adding more or less of some ingredients or adding in any chopped up veggies you have waiting to be eaten in the fridge. Cucumber is a great add in, as is avocado! You can even replace the tuna with canned salmon or sardines for an even more nutrient packed meal!
2 cans tuna
1 pickle, diced
1 stalk celery, diced
1 carrot, grated
a few celery leaves, finely chopped
salt + pepper to taste
Serve in a butter lettuce cup
