Easy Paleo Broccoli Soup
I almost didn’t put this recipe on the blog because its SO FREAKIN’ EASY. I wasn’t sure it even counted as a recipe. But then I realized that’s exactly what people need!
I threw this soup together with ingredients I already had in the house. It didn’t take any planning. Buy a couple containers of bone broth to keep in your cabinet, keep some frozen veggies in the freezer and always have garlic and onion in the house.
As a holistic nutritionist, I’ve found that most people WANT to be healthier and WANT to eat real food, but time is usually the thing holding them back. These days, its just not realistic for most of us to be in the kitchen, prepping and cooking every single meal. Life is just too busy to make that happen.
But that’s part of the reason I started posting food recipes. You don’t have to be a whiz in the kitchen or sacrifice everything else in your life in order to eat a whole food diet. I’m here to show you simple ways to fit this real food lifestyle into your life!
2 16oz bags frozen organic broccoli
1 32oz container bone broth
1 white onion, diced
1 cup full-fat coconut milk
2 garlic cloves, minced
salt and pepper to taste
Melt the ghee in a large pot on medium-high heat
Add diced onion and saute until somewhat translucent (couple minutes)
Add minced garlic and saute for a minute
Add bone broth, broccoli, coconut milk and salt + pepper
Bring to a boil
When boiling, reduce heat to a simmer and let cook for 15-20 minutes (if using fresh broccoli, it will need to cook a bit longer)
Remove from heat
Use a food processor or large blender to puree until smooth
Add bacon for extra flavor!
